Buy their Taylors Eye Witness Classic Chantry Knife Sharpener and use EVERY time before and during long use same as a butcher does and it will keep a great edge without wearing the blade, or get a steel and do likewise.They also make a 25cm (250mm) version, I have had that for about 3 years, and once use to the extra size, it is now my favourite. I have collected 10 of this range of knives, the bread knife is the the best bread knife I have ever used, and the flexible fish filleting knife is very useful for a lot of purposes.     This is a great little knife, bought a few months ago to replace the one I had had for 40 years! I think dishwashing is too harsh; long periods in water can loosen the rivets, tarnish the blade and discolour the handle. I hope this helps. see less
