David Dallaire, CEO Dalstrong, Established 2014

The Dalstrong Origin Story

Dalstrong first began in the sweat and glory of professional kitchens, where CEO and founder Dave Dallaire worked alongside line cooks and sous chefs who tirelessly devoted every ounce of energy and passion to their craft. Watching these culinary warriors give everything they had while using stodgy, uninspired knives, he asked: “Where are the culinary tools to match their intrepid spirit?”

And so he started Dalstrong in 2014, recruiting an always-hungry global team who believe that today’s culinary artists deserve tools that push the limits of their imagination. We’re convinced we can change the world around us through our products, our creativity, and our community. Gathering inspiration that fuels our sense of adventure, from ancient warrior cultures to architecture to fighter jets, we scour the planet for the best materials and manufacturing partners to execute this vision — and will never stop raising the bar, smashing boundaries, and celebrating culinary mavericks in this quest.

Dalstrong professional chef knife manufacturing process

Technology, Meet Tradition.

Our glowing reviews aren’t a coincidence — they’re the result of our commitment to quality, starting with the primary materials we use.

Every line of knives sources premium steel from Japan, America, Germany, Sweden & China.

These premium imported materials are painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years.

These highly trained craftsmen spend anywhere from 30-60 days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles using the 3-step Honbazuke honing method.

This traditional Japanese process is married with high-tech processes such as Cryo-tempering which improves the steel’s crystalline structure (making them stronger). This merging of modern technology allows us to achieve exceptional quality while keeping the costs of our knives lower for our customers.

Supporting Our Community

In addition to working directly with chefs, Dalstrong has partnered with various institutions to positively impact our communities and the culinary world at large.

By the end of 2021, we’ll have donated 1200 professional chef knives to the Careers through Culinary Arts Program (C-CAP). A workforce development nonprofit, C-CAP provides culinary, job, and life skills to middle and high school kids across the United States. A thirty-one-year-old organization striving to help further food and social justice, equity, and inclusion, they’ve served 350,000 students and distributed 62 million in scholarships to date.

Dalstrong is also proud to have joined both the Wounded Warrior Project and Wounded Warriors Canada. Both projects support veterans or first responders and their families, offering various support programs for community-building, mental wellness, physical wellness, career counseling, and independence.

Customer questions and answers

  • Is the blade itself stainless steel? If not do you recomend a knife pil to care for it?
Thank you for your question. The blade is made of high carbon steel, with added chromium to help with rust resistance, but it is not stainless steel. It's really not required to oil the knife to maintain it. You just have to observe proper washing, drying and storing.
  • What angle the blade is sharpened? 15? 20? Or less then 15?
It is stated in the little instruction booklet but I don't have it near me to check right now.
  • A quick google search reveals that these knives are made in china. there is also a clue in the listing where it says “imported” german steel!

Allow me to answer that question in detail. We use premium materials from different locations depending on the product (for example, our Shogun & Phantom Series uses steel made in Japan, and Our Gladiator Series uses steel made in Germany and handles made of Pakkawood from Spain.) Our knives are painstakingly assembled by expert blades smiths in a state-of-the-art facility within YangJing, China (a city renowned for knife crafting for nearly 1500 years). Our Shogun Series specifically are crafted using imported Takefu Japanese VG10 super steel. The blades are heat treated, cold-rolled and annealed to reveal the layered pattern. Expert knife makers trained in traditional Japanese knife craft (the head foreman himself trained for years in Japan under a master tradesman) spend days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles under strict guidelines using the 3-step Honbazuke method. Honbazuke means roughly means "truer edge". Honbazuke honing originates from traditional Japanese knife production where the blade is sharpened and polished by hand in three careful stages: The blade is first coarsely ground using a vertically rotating sharpening stone, followed by a fine honing utilizing a horizontally rotating sharpening stone. The edge is then polished using a leather stropping block for scalpel-like sharpness. This is married with high-tech processes such as Cryo-tempering which improves the steel's crystalline structure (making them stronger). We are thus able to achieve exceptional quality, but keep the costs of our knives lower for our customers. We offer unparalleled quality AND support at pure value pricing. If these were produced in Japan the costs would be significantly higher. Our Chinese factory proudly stands head and shoulders above all others in YiangJiang, as our artisans (and lead foreman specifically) are on a personal mission to prove to the world Chinese quality can be world-class. Our Gladiator Series and Phantom Series goes through similar rigorous processes, with unparalleled attention and care given to each blade. We are so confident in the quality of our knives we offer an industry record-length 120-day full money back guarantee (including the shipping) and a limited lifetime warranty. We are always here for our customers and are happy to answer any additional questions you may have. see less
  • What level of grit whetstone is best to use with this product?
I use a good quality steel to keep it in tip top condition. I've never let the knife edge dull and use the steel gently i get great results this way.
