  • Do you need special equipment to sharpen or will a traditional steel do ?

    In terms of cutting through chicken bone, a cleaver is the best knife for the job. Unfortunately, Amazon made a sweeping policy change earlier this year where no 3rd party seller can sell cleavers on Amazon.co.uk – only Amazon Retail. So, we are no longer able to sell our Cleaver Knife on the Amazon UK platform, howeve… see more In terms of cutting through chicken bone, a cleaver is the best knife for the job. Unfortunately, Amazon made a sweeping policy change earlier this year where no 3rd party seller can sell cleavers on Amazon.co.uk – only Amazon Retail. So, we are no longer able to sell our Cleaver Knife on the Amazon UK platform, however, it is available on the Amazon US platform. We do not recommend using the ARS 10” Chef knife to cut through bones, or to cut on hard surfaces like stone, glass or ceramic. The blade uses Japanese AUS10 super steel with 33-layers per side of high carbon stainless steel. After heat treatment and cryogenic cooling, the blade is 61 Rockwell, which is very hard – that combined with a very fine cutting edge does not go well with the mentioned environments – it will put the edge at risk of chips or damage. It is perfect for carving chicken, just not bones of any type. For deboning, you can take a look at our ARS Honesuki 4.5”, it is versatile with great manoeuvrability. Hope this helps. see less

I know a Gurkha chef who works in a very good Indian restraint and he say’s to use a steel after every use standing it up on a chopping board and smoothly wipe the knife down and back 3 or 4 times each side and every year touch it up on a stone. So yes, they will need sharpening but no not very often. John see less
