    Just a sharpening steel is fine. It’s razor sharp. Wusthof do a good steel for about £15.

    The entire knife is stainless steel. The handle is coated (assuming some trype of acrylic) and the lettering on the handle is the steel underneath. The coating has proven quite durabke showing no ware, chips or scratches.     Hi Dale. This depends on how skillful you are with knife-sharpening. Zelite knives are made from great steels, and usually a little harder than your average knife. So, the edge is retained for longer, but is more difficult to get back to super-sharp. Ideally, use a ceramic or diamond stone of about 600 grit. Angle … see more Hi Dale. This depends on how skillful you are with knife-sharpening. Zelite knives are made from great steels, and usually a little harder than your average knife. So, the edge is retained for longer, but is more difficult to get back to super-sharp. Ideally, use a ceramic or diamond stone of about 600 grit. Angle the blade at about 20 degrees to the stone and make 10 passes over the stone with light pressure, then turn to the other side and repeat. Do this again with 5 passes each way, then 3 then 1. If your technique is good, you should have a great edge. Use this approach if your knife is feeling a bit blunt, but before it gets to that point, if you just do 2-3 passes over your stone each use, then that should maintain the edge nicely. If the blade needs a regrind, I use the Tormek system, which is superb for almost anything that needs sharpening. The really 'anal' types use a Wicked-edge pro system. Both these are not cheap, and overkill for most people...........unless you really love and respect your knives as working tools.
