No matter what I cut, I clean the knife with a swipe or two with a soapy brush (keeping it away from the handle) and the quick rinse of the blade, and carefully dry it with a swipe of a dry towel. CAREFULLY!, I once cut my finger pretty bad from reaching too far down the blade while drying it. see less
